Echo Horizon School Celebrates Earth Day with 'Taste of the Garden' [PHOTOS]

Students at the Culver City school harvested vegetables, made homemade pesto, sang Earth Day songs and created leaf prints.

It was a full day of Earth Day festivities at Echo Horizon School on April 22, which began as soon as the first bell rang. 

Preparations for “Taste of the Garden” commenced as all grades helped with the morning harvesting of lettuces, onions, edible flowers, and the main attraction ingredient, basil.

Thanks to a , the school recently doubled the capacity of its existing garden by adding three large planter boxes.  Six weeks earlier the new boxes had been planted with the basil in preparation for the Earth Day celebrations.

Following the morning harvest, administrators and parents washed and prepared homemade pesto and lemon basil water. Sony employee and Echo Horizon School parent, Elise Futterman said, “You could smell the pesto as you walked down all the hallways…and it tasted delicious.”

Students waited patiently in line to try the homemade pesto, either with slices of bread, or on large lettuce leaves, also from the school’s garden. Students and adults were asked to bring their reusable water bottles to taste some of the lemon basil water.

“We practice what we preach,” said Assistant Head of School, Martha Schuur. “As a school we teach about sustainable living and being environmentally conscious, and as a community we're actively examining any waste and implementing alternative ways for living life at school each day.”

Following a tasty snack, students had the option of creating leaf prints with paint, singing Earth Day songs in the outdoor classroom, enjoying an earth-related story in the library, or playing a lively game of basketball, complete with special Earth Day backboards.
