CityTypes: The Coffee Shop Owner

Inspired by the Empress Hotel on Victoria Island, the owner of the Conservatory for Coffee, Tea, and Cocoa draws locals with her speciality blends.

What started out as an idea for an art gallery with a simple cart of coffee in the corner has transformed into an establishment with artistic flair written in the cream that tops the steamy brews.  Ingrid Trygstad, owner of The Conservatory for Coffee, Tea and Cocoa, said having a tea shop was a childhood dream.  

"Growing up, we'd travel across the country and the goal was to find the places with the best coffee and pastries.  My dad would put a cube of sugar on his spoon, dip it in the creamed coffee and feed it to us.  That's where it all started."
